The Santoku, which translates in to English as either “three-purpose” or “three virtues”, gained this name because it is well suited to cutting meat, fish, and vegetables. Santoku knives are often recommended as a multi-purpose kitchen knife for home cooks, and it is more commonly found in Japanese households than Gyuto knives.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

The beauty of Damascus pattern meets with Japanese Hagane core edge, that creates distinctive harmony and attract both enthusiasts of Damascus and Hagane. You can find this combination from the Blacksmith’s forged knives.
